Grill Chicken - Is a Whole Fryer, Butterfly cut (Butter flied is boned and opened flat like a book, the two side remain attached by the back and skin). Butter flying and using tongs to turn or flipping without piercing the surface so that juices do not escape. We always leave the skin on during cooking. The skin seals in the juices, making the meat very tender. We cook until skin is crispy. We grill the chicken 6 inches from heat, always grilling the bone side down first. This process reduces skins fat that must be rendered during the grilling process.

Smoke Brisket – The Steer’s Breast (Brisket is very tough and contains Sizeable percentage of Fat. The brisket flavor and texture come from the fattier section. We Smoke Cujo’s brisket for 14 hours fat side up in the chamber. What makes our B-B-Q great? We slow cook in a chamber that is indirectly heated by fire and continuous moisture.
